Ingredients:
- 1 1/2 cups strong-brewed House of the Guud Shepherd African Kahawa Coffee, cooled
- 1 cup dates, chopped
- 1 tsp baking soda
- 1/4 cup unsalted butter, softened
- 3/4 cup dark brown sugar
- 2 large eggs
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking powder
For the Sauce:
- 1/2 cup heavy cream
- 1/4 cup dark brown sugar
- 2 tbsp African Kahawa Coffee
- 1/4 cup unsalted butter
Instructions:
- Preheat oven to 350°F (175°C). Grease a baking dish.
- Soak dates in coffee for 10 minutes. Stir in baking soda.
- Cream butter and sugar, beat in eggs, then mix in flour and baking powder. Fold in the date mixture.
- Bake for 35 minutes.
- For the sauce, simmer cream, sugar, coffee, and butter until thickened. Pour over the warm pudding.
- Serve with whipped cream or vanilla ice cream.
